Little toasted bruschetta with mozzarella
and tomatoes (Serves 4 to 6 people) what you will need:
- - 1 garlic clove
- - olive oil
- - 2 mozzarella balls
- - 2/3 tomatoes
- - non-stick baking paper
- - coriander
- - black pepper
- - 6 or 4 uncooked white rolls/ baguettes
Step 1: Line your baking tray with a sheet
of baking paper and pre-heat the oven to 200°(fan oven) or Gas mark 7.
Step 2: Prepare the small baguettes by cutting
them in half down the middle, try and make them approximately the same size, line
them up on the baking tray and add a drizzle of olive oil on each bruschetta.
Then, peal and separate a clove of garlic and rub the garlic on all the
bruschetta so the flavour sinks in them.
Step 3: Place these in the oven for 5
minutes or for half the time that is indicated to cook the small baguettes, while these are cooking start slicing the mozzarella into
thin slices. Once you have done this, start cutting the tomatoes in half after
you have washed them, then dice them.
Step 4: Once the 5 minutes have gone by,
take the bruschetta out the oven and they should be a little bit crispy but not
completely cooked. Place 1 or 2 slices of mozzarella on each bruschetta, then
add a couple pieces of diced tomato. Afterwards, place the tray in the oven for
another 5 minutes.
Step 5: When the bruschetta are cooked, the
bread should be crispy and the cheese should be melted. Take them out of the
oven, add some black pepper, you can also had some chopped up coriander or
basil.
You could serve the bruschetta on a plate
or a wooden board, you could accompany them with some dough balls which you
just need to heat up in the oven for a couple minutes and some pretzel crisps
and mini breadsticks.
